In theory, as golem parts belong to "Junk" treasure class, you would want to kill monsters that drop a lot of junk class items. Out of my head I'm not sure whether such monsters exist :D. See guide chapter (6.3) for treasure classes of items. You can search for monsters in-game too via ~lr...

Yes, +hit,+dam enchantments help its digging power. Quite significantly actually! Also, the more the digging tool weighs the better it can dig (but may be too heavy to wield if the character's STR is too low, which will give a warning message when equipping it).

Ah sorry. Their level got adjusted, yes.
